Tip of the Day
Those packages of pre-sliced apples you can buy at the store are great for a healthy snack on the go, but the price can add up. Make your own by slicing apples, soak in cold water for 3-5 minutes, then soak in a lemon-lime carbonated soda (such as 7-up or Sprite) for 3-5 minutes. Divide into snack size portions and store in Ziploc bags in the fridge. The lemon-lime soda will keep the apples from browning and make them last longer.

I am reposting about the homemade noodles to provide information that was requested.
My Mom was born in 1912 ~ her noodles were simple & perfect ~ and really didn’t have an ‘exact’ recipe:
3 eggs
a pinch (literally) of salt & baking powder
3/4 cup of flour & keep adding.
*Whisk the eggs, add the dry ingredients, Mom used a fork at this beginning stage and kept adding flour a little at a time and cutting it in until the dough was able to be picked up and worked by hand.
Continue to work flour into the dough, at some point it simply becomes a ‘feel’ or a ‘sense’ of when it can be rolled out.
The biggest tip: ROLL THEM THIN AND CUT THEM THIN
She would only let the rolled out dough dry about 30 minutes before she loosely rolled it up like a long burrito and started cutting VERY THIN slices. Sprinkling with flour is a constant throughout these steps to make sure there is no sticking.
And to bring it all together, whether it’s chicken or beef, it is vital to have a strong rich broth ~ and plenty of it. We always had them over mashed potatoes and until you’ve mastered them, knowing the amount of broth is a learning experience because the noodles can really absorb & over-thicken the mixture.
Don’t be intimidated ~ they are actually quite easy to whip up.

Chocolate Chip Cheesecake with Graham Cracker Crust
Serve this Chocolate Chip Cheesecake as the ultimate treat, where every slice offers a perfect balance of creamy cheesecake and chocolate chips, all atop a decadent cocoa-flavored crust.
Ingredients:
For Graham Cracker Crust:
1 ½ cups graham cracker crumbs
⅓ cup white sugar
⅓ cup unsweetened cocoa powder
⅓ cup butter, melted
For Cheesecake:
3 (8 ounce) packages cream cheese
1 (14 ounce) can sweetened condensed milk
3 eggs
2 teaspoons vanilla extract
1 cup mini semisweet chocolate chips, divided
1 teaspoon all-purpose flour
Instructions: Preheat Oven: Set to 300°F (150°C) for gentle baking.
Crust: Mix graham crumbs, sugar, cocoa, and butter. Press into a 9-inch springform pan.
Batter: Beat cream cheese smooth. Gradually add condensed milk, then eggs and vanilla. Blend until smooth.
Chocolate Chips: Coat ⅓ of the chips in flour, fold into batter. Pour into crust. Top with remaining chips.
Bake: For 1 hour. Turn off oven, leave cheesecake inside for 1 more hour.
Cool: Remove, cool to room temperature.
Chill: Refrigerate, ideally overnight.

Hawaiian Banana Bread – Lady’s universe
Ingredients
1/2 cup butter, softened
1 cup sugar
2 large eggs
1 cup crushed pineapple (do not drain)
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup shredded coconut
Instructions
Preheat oven to 350 degrees.
In a large bowl, cream butter and sugar together with a mixer until light and fluffy. Add eggs, one at a time and beat to incorporate.
Stir in mashed banana and pineapple.
In a separate, medium sized bowl, sift together flour, baking powder, baking soda, and salt. Add to wet ingredients.
Stir in coconut flakes/shreds.

2 Ingredient Lemon Cake Bars!
Ingredients:
1 box angel food cake mix
1 (22-ounce) can lemon pie filling
Directions:
Heat the oven to 350 degrees F, and spray a 9 x 13-inch pan with nonstick cooking spray. In a large bowl, stir together the angel food cake mix and lemon pie filling.
Once fully mixed, add to the prepared pan, and bake for about 35 minutes, until fully cooked and the top is lightly browned. Let the cake cool, cut it into bars, and if desired, sprinkle with powdered sugar. Enjoy!

Yummy salad/almost like pickles
7 cups sliced cucumbers
1 cup sliced onion
2 cups sugar
1 cup white vinegar
1 tsp celery seed
Mix well. Let stand for 6 hours. Then they are ready to eat or put into containers and freeze. Eat within 9 to 12 months.
Party mini cracker sandwiches!!
INGREDIENTS
- 48 Ritz crackers
- 8 slices deli ham
- 8 slices Swiss cheese
- 4 tablespoons butter, melted
- 2 teaspoons Dijon mustard
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon garlic powder
- 1 teaspoon poppy seeds
- 1/2 teaspoon dried minced onion
PREPARATION
- Preheat oven to 350°F.
- Place half of the crackers in a 9×13-inch baking dish, flat side down.
- Tear ham into small strips and fold and place on each cracker.
- Cut cheese into 1-inch pieces and place one on each piece of ham/cracker. Top with another cracker to form a mini sandwich.
- Stir Dijon mustard, Worcestershire sauce, and garlic powder into the melted butter, then pour evenly over the cracker sandwiches.
- Sprinkle poppy seeds and minced onion evenly over the top.
- Bake until cheese has melted and tops are golden brown, 10-12 minutes.
- Serve warm and enjoy!

HEALTHY COOKIES _ NO SUGAR! NO FLOUR!
INGREDIENTS:
3 mashed bananas (ripe)
1/3 cup apple sauce
2 cups oats
1/4 cup raisins or nuts
1 cup good dark chocolate chunks (Lily’s brand is my fave)
1 tsp vanilla
1 tsp cinnamon
Preheat oven to 350 degrees.
DIRECTIONS:
Mix all ingredients together and
bake for 15-20 minutes.

Slow Cooker Recipe & Tips
Last night I made.. Bread!! I’ve wanted a bread machine for years but couldn’t justify the extra counter space and another appliance in the kitchen. This works perfect and tastes so good – one less thing to buy on my weekly shop!
Literally The Best Bread Recipe Ever (Adapted)
1/2 cup warm water
2 cups of warm milk
2 Tbsp melted UNSALTED butter
1-3 tablespoons of sugar (add more if you like sweeter bread)
3 tablespoons of active dry yeast (conservative side)
6 cups of whole wheat flour (or 3 cups whole wheat & 3 cups all-purpose flour)
2 teaspoons of salt
1 teaspoon of baking powder
Grab a big bowl, and stir the 1/2 cup of warm water, 1 (or more) tablespoons of sugar, 3 tablespoons of yeast. Wait for 5 minutes (no longer – mine went all over the place the first time!) – it should be frothy on the top. While your waiting warm 2 cups of milk and 2 Tbsp of butter in microwave.
Next, add milk and butter to yeast mixture. Using a standing mixer slowly add the 6 cups of flour, 2 teaspoons of salt, and 1 teaspoon of baking powder. Mix and knead the dough. (I used dough hook once I had incorporated most of the flour for about 5 minutes then kneaded by hand for another 5-7 minutes.)
Line your slow cooker with cooking (baking) paper and place in your round ball of dough. I will rise in the slow cooker as it heats through. Cook on High power for 2- 2.5 hours. Start checking at every 7-10 minutes until top is sponge-y but springs back and no moisture on the top. The bottom should be a nice brown colour as well as sides. I put mine (just the loaf) in the oven on broil/grill for less than 5 minutes to get a nice crusty top too!
NOTE: You can use a tea towel on top if you want to avoid condensation dripping in down on the loaf. I haven’t tried this myself – let me know how you go!
*Use UNSALTED butter or adjust extra salt added!
*Add MORE sugar if you want a sweet bread like in the shops.
*If you can’t or are not skilled/practiced at kneading try the 50:50 ratio with whole wheat flour and all purpose flour, otherwise you will end up with a very dense loaf.
*Make sure it is completely cooked through – my loaf took 2 1/2 hours!!
Slice and enjoy as whole grain toast or sandwich bread!

Snickerdoodle Cookie Bars
12 cookie bars
10m prep time
DOUGH
- ¾ cup butter, fully melted
- ¾ brown sugar
- 1 cup sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 2 cups flour
- 1 teaspoon baking powder
- 1 teaspoon cream of tartar
- ½ teaspoon salt
TOPPING
- ¼ cup sugar
- 2 teaspoons cinnamon
PREPARATION
- Preheat oven to 350 degrees and thoroughly grease a 9×13 pan.
- Mix the melted butter and sugars together in a large bowl until smooth. While continuing to mix, add the eggs and vanilla.
- Add the flour, baking powder, cream of tartar, and salt to the bowl of wet ingredients and stir until combined.
- Transfer batter to the prepared baking pan and press into an even layer.
- In a small bowl, combine sugar and cinnamon for the topping, then sprinkle over the batter.
- Bake for 20-25 minutes or until the top is just turning golden.
- Allow to cool for 30 minutes before slicing and serving.

INGREDIENTS
UNITS: US
- 2(16 ounce) cans tomatoes
- 2tablespoons oil
- 1cup onion, finely chopped
- 1small jalapeno pepper, minced
- 2garlic cloves, minced
- 2tablespoons red wine
- 1teaspoon dried oregano
- 1teaspoon dried ancho chile powder
- 1⁄2teaspoon cumin
- 1⁄2teaspoon dried basil
DIRECTIONS
- Drain the tomatoes, and reserve the juice.
- Chop the tomatoes, and set aside.
- In a medium saucepan, heat the oil over medium heat.
- Add the onion, jalapeno and garilc.
- Cook until onion is translucent, but not browned, about 5 minutes.
- Add the tomatoes and their juices, and all remaining ingedients, and simmer uncovered, stirring occasionally for 20 – 30 minutes, or until the sauce thickens sllightly.
- Using a food processor or hand blender, puree the sauce.

Fun French Dressing
1 can condensed tomato soup
1/3 cup wine vinegar
3/4 cup olive oil
2 tablespoons Worcestershire sauce
1 teaspoon paprika
1 teaspoon salt
1/2 teaspoon garlic powder
1/2 cup brown sugar
Combine all ingredients in a quart jar or whatever container. Close lid then shake for one minute.
Refrigerate. Use whenever you want to dress a nice salad. Shake first if it has separated at all.
Enjoy!

Peppermint Chocolate Bark
Ingredients
6 regular candy canes
9oz bag dark or regular chocolate chips…any flavour will do
2 or so drops either peppermint essential oil or extract
Directions
Put candy canes in zip lock bag and on a towel or something use hammer/meat mallet or even rolling pin to crush them…Have fun with that
set aside a couple small scoops for later
Microwave choc/whatever chips in 30 second intervals and stir in between
When ready mix with crushed canes and spread on parchment lined pan top with set aside crushed canes and cool in your fridge for at least a half hour.
Break apart and add to decorative gift bags or just serve and enjoy!
Fave choc chip cookies
Recipe can be used with red and green m&ms for Christmas Also raisins and a little oatmeal.
Recently I tried them with a Salted Caramel chip …Amazing
Ingredients:
1c shortening/margarine or butter ..depending on your preference
2eggs
1&1/2c brown sugar
2tsp vanilla
2&1/2 c flour…sometimes a touch more
1tsp baking soda
1tsp salt
Mix all together by hand or for smoother dough with a mixer on low or medium
Bake at 375 degrees for 9 minutes or so depending how soft or brown you like your cookies! I only use a small teaspoon for dropping so mine cook fairly quickly.
Cheesy Bacon Bites
an appy snack
1cup Mozza shredded
1cup Parmesan Shredded
1 Egg
3 pieces of Bacon crumbled up
1 Tbsp Mayo
1 Tbsp cream cheese
dash of onion powder and Garlic powder
combine all ingredients and scoop by teaspoon into a mini muffin tin
add handful of chillies or green onion (optional)
Bake for 10 min at 350 degrees …let cool
